Dish Up A Truffle
Truffles are an intensely flavorful ingredient with the power to turn a simple dish into a sublime masterpiece. Some truffles (
tartufi
) are literally worth their weight in gold! Saverio & Gabriella welcome you to their 30 acre farming estate, 4 miles outside of Città di Castello along Umbria's Tuscan border. This estate is dedicated to the production of truffles. Discover how this magical member of the mushroom family is cultivated and preserved. Try your hand at age old recipes as you enjoy a traditional Umbrian lunch.

Meet Gabriella & Saverio, the truffle masters at the farmhouse that crowns their family estate. As everyone gets acquainted, they guide you through their shop, production facility and a room dedicated to the history of the truffle.
In the production area, participants are shown how truffles are cleaned, preserved and prepared for a variety of uses.
Sample two varieties each of white and black truffles and learn to distinguish them for use in different recipes.
In the kitchen, Gabriella & Saverio get everyone involved in the preparation of lunch. An
antipasto di crostini
, truffled pasta,
polenta
and
frittata
are made by properly using each of the four truffles sampled earlier.
The dishes are served and enjoyed in the dining room along with wine and a dessert of Umbrian cake and
Vin Santo
.
